Salsa, four times fast.

Salsa night! Put an ABBA / Skinny Puppy mix on, dance with reckless abandon and wield a knife in a slightly more controlled fashion.

This afternoon, I made a chopped tomato-type salsa, a corn salsa and guacamole. We also have a nectarine corn salsa left over from last night’s dinner. Why all the salsa? Because we’re having fish (tilapia) tacos tonight. I’ve never made fish tacos before but I recently had success cooking salmon so I’m confident that I can wing the tacos, recipes be damned. I have a vision!
